Project
Fish & Shop is an online fishmonger that delivers within Paris and its suburbs. The company has also developed a “buffet of the sea” catering business.
Its founder Christophe HIERAX, elected best fishmonger in 2017, is also the general manager of 2 fishmongers in the 16th arrondissement (Poissonnerie de Passy & La Vendéenne) as well as a boutique catering for fish and seafood dishes (The catering annex ).
Solution
Design and construction of a 150m² laboratory for fish vacuum packing intended for online sale. These include:
- A 27m² cold room
- A 43m² filleting workshop
- A 13m² vacuum-packing area
- A starting cold room of 9m²
- Changing rooms and pantry room for staff
